René Redzepi

Danish born chef is the talent behind two-Michelin starred restaurant Noma – voted best restaurant in the world in 2010, 2011, 2012 and 2014 – putting Copenhagen firmly on the food map. Although he trained in top restaurants all over the world (El Bulli, King Hands Kaaelder and The French Laundry among others), Redzepi’s inspiration comes from childhood holidays spend in rural Macedonia where he learned to forage for food and appreciate local, seasonal food grown or raised on the land. Through Noma, Redzepi has created ‘New Nordic’ – a cuisine that brings the wilds of Scandinavia to the modern plate, reviving many long-forgotten regional ingredients, reinventing them with innovative cooking methods, and presenting them in an entirely fresh perspective that is all about ‘a sense of time and place.’
