René Redzepi

Leader of the new Nordic cuisine revolution, Redzepi has showcased wild Scandinavian plant life with a modern approach. He put his country on the gastronomic map by recovering forgotten ingredients through innovative methods, highlighting the ability of these products to express the taste of “here and now”. His iconic restaurant Noma has been named the best restaurant in the world on four occasions – for 3 consecutive years between 2010 and 2012, and again in 2014 – by The World’s 50 Best Restaurants list. Noma was temporarily closed in 2017 when Redzepi embarked on a trip around the world, visiting places like Tulum (Mexico). Noma reopened its doors in 2018 at a new location in the Danish capital. Among Redzepi’s most influential projects, MAD stands out. This organization not only holds symposiums, but also hosts training and reflection events on the challenges posed by the world’s food systems.
